    Question for Crock Pot experts

    Okay crock potters,

    I've got one for ya:

    I've got a whole (raw) chicken and a bunch of really good organic brown rice.

    Want to make a chickeny, ricey casserole type thing. Not so much a soup, and maybe a really REALLY thick stew-ish... you know what I am getting at? Throw in whatever veggies on hand.... spice er up.

    Thoughts? If anyone could point me in the right direction here....

    Do I throw the chicken in it raw? Or roast it a bit first?

    Help me out, maestros! Gracias.

    ps- chicken is from farmers market and still has the head attached! oy. (this is gonna be fuuuun)

    Antelope (back-straps and ground) chili. Some kidney beans, tomatoes, onions, jalapenos from the garden. Top with cheddar. Yum

    I usually brown the chicken before it goes in the crock pot. Last week I made some curried chicken with potatoes in peas in it, felt lazy and just stuck the whole chicken in the bottom still raw. I added everything else, turned it on, and it was just fine.

    A few jars of my favorite locally made marinara, chunks of hot italian sausage browned on the stovetop, diced onions and sliced crimini mushrooms sauteed in the fat from the sausage, lots of garlic and spices, and some frozen leftover meatballs I had made and put in the freezer earlier this month.

    Smells sooooo good in this house right now.

    Making a huge salad and some fresh homemade garlic bread for a tuning and mounting party with some friends tonight.

    Mother fucking crock pot turned off when the power went out yesterday. Pot roast= cold as fuck. Any tricks for that problem?

    This is the best chili I ever made, not so much crock-pot, but you asked for good chili.

    * 1 tbsp vegetable oil

    * 6 sausage links
    * 1 tbsp olive oil
    * 5 oz pancetta, diced (sub bacon if pancetta isn't available)
    * 1 large yellow onion, diced
    * 9 minced garlic cloves
    * 1 diced green bell pepper
    * 2 cups dry cannellini beans, rinsed
    * 1 tbsp finely chopped oregano leaves
    * 2 tsp red-pepper flakes
    * 2 qts (8 cups) chicken stock
    * coarse salt and ground black pepper to taste

    Instructions

    Film a large stock pot with vegetable oil and place over moderately high heat. Brown sausage, turning frequently to get all sides. Reduce heat to low and cook through. Remove sausage from pan and cool. In the same pan, add olive oil and pancetta. Render pancetta over low heat until crisp. Add onion and cook until soft and translucent. Add garlic and sauté until golden. Add remaining ingredients, increase heat, and bring to a boil. Hack up the sausage and toss into to chili mixture. Lower heat and simmer until beans are tender, at least 90 minutes, stirring occasionally. If you find it too watery, whip up a quick little roux and it will thicken up.

    Salt and pepper to taste. I like to toss on some sour cream and eat this with corn bread.

    give it a nice thick coating of oil. I like to tip the pot on it's side and pour it in slow, making sure to cover every inch without making too big a puddle at the bottom.

    mrs. nesta is going to try sauerbraten today or maybe tomorrow. The slow cooker method eliminates the need for marinating the roast for 72 hours apparently. We'll see- will give a report after eating.

    Currently a recipe from our crock pot cookbook:

    3 lb. deboned lamb roast stuffed with a combo of bread crumbs, celery, carrot, onion, rosemary, mint, butter, etc.

    1 hour on high 10-12 on low.

    We're also going to roast acorn squash with some rosemary and balsamic. It's already smelling absolutely delicious.

    Any thoughts on the following idea

    Let's say you have an AC/DC inverter that plugs into the cigarette outlet in your car and you have a road trip coming up. Could you plug the crock pot into the inverter, construct some awesome contraption for the center console that holds it in place, and then have dinner cooked when you pop out of the car 8 hours later? That would kick ass.

    I continue to be amazed by the magic of the crock pot. I found a frozen pot roast in my parent's freezer, took it home, defrosted it, threw it in the new crock pot (my parent's took my original to their house in Mexico for the winter) with:

    beef stock
    salt
    pepper
    minced garlic
    oregano
    maybe 1/2 cup of port wine

    and walked away for 9 hours or so.

    the roast turned out amazing. I can't believe that you can just throw a bunch of random stuff into a crock pot and hours later it's transformed into an amazing dish that your guests love.

    i tried these yesterday, and they got way overcooked. i think there is not enough liquid in recipe and would probably at elast double it. unless the transcriptin is missing something

    my wife made a killer pot roast in the crock pot tonight. We are finding we are using it more and more.

    My wife and I are in the exact same boat. Having trouble getting motivated, although it sounds easy as shit from reading this thread. Need to get on the ball.

    Without going through the entire thread, I'm wondering if anyone has some good vegetarian suggestions to get things going?

    it is super easy. but IMHO, while veggie recipes would be ok, they miss out on the power of the crockpot, which is to slowly cook tough cuts of meat, making them delicious and tender.

    Today was your basic chicken chili:

    2 chicken breasts
    1 onion
    1 green bell pepper
    3 jalapenos
    1 can of whole tomatoes
    1 can of tomato sauce
    4 cloves of garlic
    kidney and red beans soaked for 24 hrs
    a few ounces of red wine vinegar
    some Frank's hot sauce
    a dab of Better than Bullion chicken stock
    various spices (black pepper, oregano, some monterey steak seasoning, paprika, cayenne, garlic powder)

    I'm farting already.
