A few things:
1. California Pizza Kitchen sucks. Airport food. Blech
2. CA-120 into Yosemite from the West is supposed to reopen June 10. Still no ETA on Tioga.
3. Just got back from Yosemite on Memorial Day weekend. Just go. There will be crowds. They are there for this, and you should be too. I've never seen this much water in the valley and coming down the falls. And waterfalls in places I don't recall seeing them before. Ride a bike around the valley so you can stop and gwak wherever you want.

Don't hold your breath waiting for Tioga Road to open, but Sonora Pass just to the north is supposedly cleared so it should open up soon. Other roads in the Sierra are problematic: Sequoia still isn't open between Montecito Lodge and around the southern entrance, and Cedar Grove (Kings Canyon proper) isn't expected to open this year at all.
Following up to say thanks for all the info and suggestions. We had an awesome trip, ended up sticking to the northern coast for this trip for a few reasons (namely the dog and our eleventh-hour planning). We'll go back to points further south without the dog next time. Our general itinerary: San Rafael Swell -- Great Basin National Park -- Truckee -- Mendocino/Ft. Bragg -- Humboldt Redwoods SP -- Arcata/Trinidad -- Lake Tahoe -- American Fork/Timpanogos.
We loved how uncrowded all of these places were, super chill. Even Tahoe wasn't that busy, as we hit it just before the July 4 weekend. Camped for most of the trip except for an AirBnb for a few nights in Trinidad.
