...cycle tour in Belgium?

Couldn't find a thread that quite addressed this topic. Tried to make one that would have some general utility.

I'm planning a Trappist beer-focused bike tour in Belgium in the spring. My buddy is pushing for May (his inlaws are in Spain and have seen a lot of gnarly heat waves the last few years), I'm thinking the weather in June will be better, 'cause we're going to be in Belgium, not Spain.

I feel like being jacked up on uppers makes it way easier to not give a shit. We're going to be jacked up on Trappist beer, and will have a collectively harshed mellow if we're doing it in the rain.
