Those are the 3 shops I would try, all local. Crystal is probably not where I'd take something that I knew to be complex, as they are mostly a rental shop. Alpine Base and Edge is way more expensive, but that or Larry's (which is not owned by Larry anymore) are probably where I would go.

Alpine Base and Edge is probably the best shop for tuning/base work. But more expensive than most.
How is a pivot remount difficult? You don’t need a tech, you need a stoned moron in a shop with a jig.
or sack up and mount your own shit. And there’s gotta be a mag close by with a pivot jig. Or get the template 3D from Alpinord

Strange, I'm actually going to Larry's to get the boots fitted and asked who they recommended for the Pivot remount and they didn't recommend themselves...
I dunno shit about shit, but The Internet lead me to believe remounting some Pivots ~7mm from their last holes can be a bitch (and this will be their 3rd mount, they were previously mounted with a set of demo bindings). I'm happy to be finding out any jackass can do it though. Any jackass except for me that is; I've never drilled into skis before, and my first time won't be on my only (and cherished) pair. And I'm traveling to Boulder, I'm certain there's no Maggots near me.
A shop will probably not mount within 7mm of existing holes, but you can. Use wood plugs and epoxy for close holes before drilling.
I feel like you deserve more help for the Suicidal Tendencies quote. Go to Alpine Base and Edge for the best mount and advice. Chat em up about your race days. I think they have a coupon on Facebook for $10 off. If not they hand out cards for that.
Believe it or not, my second favorite Boulder mount place is REI. Who is also the cheapest.
Pretty sure Larry’s ships everything up to Tin Shed Sports in Nederland for ski work. At least they used to as recently as last year. They are solid.
The boulder REI fucked up a mount for me earlier this year and did a pretty crappy job on a tune when i made the stupid decision to go back. Don't give them your business.

Ok, so sounds like Tin Shed, REI, and Crystal's all have mixed reviews. My buddy from Boulder told me he just used to take his shit to Christy's and Boulder Ski Deals (now Epic Mtn Gear), but that's not necessarily a recommendation, and nobody else has mentioned them.
Alpine Base & Edge sounds like the favorite, but I hear the owner can be a total dickhead. And if talking about old racing days is a trick to get better service... I wonder if he'd even give a Texan the time of day. My money's green, but I dunno if he'd take it. I like to imagine he's the kind of dickhead who has such pride in their work they'd do a good job, even for the enemy.
Guess I'll start with them and work my way down the list until I find someone willing to stake their professional reputation on a 7mm remount.
One of my old roommates works at alpine base and edge, and I've hung out there a bit talking to the owners. They were plenty nice to me, I was missing some screws and they let me dig through their screw bin for 20 minutes until I found what I needed. Pricey is right for sure but I think it's worth the quality of the work they do
Your BSL is 7mm different than the current mount for the Pivots? Can you adjust the heel piece? You might have just enough slack to take it up depending on how they were mounted originally.
I've never had a shop mount anything, but I cannot imagine agreeing to move a toe piece / heel piece by 7mm if I worked in a shop. It's too close - the hole centers might be 7mm but the hole edges would be more like 4mm apart. If doing it on my own I'd fill the hole with something solid + a long curing epoxy.
If you own a drill you can buy a bit, a drill stop collar, and epoxy / glue for $30 from McMaster. Will take you less time to do this yourself than driving to a shop and waiting.
Fill with robust material of choice (i.e. fiberglass/epoxy). Install either helicoils or inserts for the win.

When holes are close to overlapping, a wood dowel from HD or Lowes with some epoxy and some sawdust works well.

I wanted to update and let y’all know that as per various recommendations here, I ended up taking ‘em to Alpine B&E. Those guys are kinda salty, but didn’t laugh me out the door. He was doubtful they’d work, but tightened down my Pivots all the way and said they were good to go.
I guess the guy at Forerunner who initially mounted them set them at their longest in anticipation that I’d be moving to smaller (correctly fitting) boots in the future.

And since the New Larry’s was mentioned, I’ll share my experiences. I saw one fitter and he was alright. I also ended using working with a different tech and the new (co-?)owner himself (Dan) and was exceedingly pleased. Overall, I’m very happy with the service I received. Being a Texan, take that opinion however you will. But I’ve seen about 8 fitters in my time, 1/3 were bad, 1/3 were great ok, and 1/3 were good
