Charmin. Motherfucking Charmin TP. Apparently Costco has a unique contract with Charmin to continue making wider sheets. Or I'd say, the width that every TP bar in North America was designed to hold. The world of TP has gotten narrow and I just won't stand for it. Looks stupid. I don't care if it makes a difference or not. Looks dumb hanging from the wall. Like puting four donut spare tires on your SUV and acting like everything is normal because the tire industry decide it could shave off a few mm and you wouldn't notice.
So yea, I get TP at Costco, even though I've got a bidet. I'm worthi it. Fuck you Big TP!
However many are in a shit ton.

I think they’re great. In the summer I wear them around the campfire because I don’t care if they get burned, and they’re light enough to wear around site at work(welding facility, must wear long sleeves).
And they layer nicely for ski days too. I’ve probably got at least half a dozen of them.

Wait, isn't Charmin the only one that's the proper width? I hate that skinny shit!

Good rec. I've been on the Portland Coffee Company bags, the yellow ones.

Any tips for making use of some of the weirder cuts of meat at Costco? I'm specifically thinking of the "tri-tip steaks" that they have, prime for $9.99 per lb in UT. I cut some up into stew chunks and braised them, pretty good, but wonder if something else is intended.

They're actually really good grilled medium rare.

Tri tip steaks, or a roast? Tri tip, which is from the bottom sirloin, is usually sold as a roast, 2-3 lbs. Though you can buy a whole tri tip, which if untrimmed will be 5+ lbs. Per above, it’s excellent grilled to medium rare. The Costco prime is very good. Try doing a reverse sear on a roast, take it to about 115-120, then sear it all over. Season with salt, pepper and garlic powder, and you have a classic Santa Maria bbq.

I’ve seen tri tip roasts cut into steaks, but never at Costco. If the meat is prime, you could treat it like a flank or hanger steak. No need to stew, especially if prime.

I really like this rub for tri-tip:

Thanks, that seems like a fun rub. The tri-tip steaks appear to be a tri-tip that is cut into roughly 2"x1"x10" strips, i.e. not a normal tri-tip. I'm not sure if that means I'm supposed to cook it low-and-slow like a normal tri-tip or grill it like another steak. T_S seems to imply the latter.

I've never seen this cut except at Costco, but they have it regularly.

I picked up Craigellachie 13 yr single malt scotch for $36 last week. That is half the price of what I paid for my last bottle.

I certainly won't claim to be an expert, but that's the same cut I use from my Costco for that recipe. Usually served on a bed of couscous with more smoked paprika.

The Santa Maria bbq is how most Basque restaurants do it, outdoor Basque bbqs will have it cut into smaller steaks and served with beans, salsa, marinated carrots and a French roll. Both cuts are always served med rare. Fuk brisket, the Basque route makes for tastier beef IMHO.

Those tri tip strips are great. I usually cut them into half lengths, marinade for a couple of days and grill it like a sirloin. For the marinade i do soy sauce, oil, a little vinger, a couple splashes of worcestershire and hot sauce, and some montreal steak seasoning or a bbq rub.

If using charcoal, I cook over direct heat for about 5min per side, then move to indirect heat for about 20min. I find they taste better if cooked to at least medium. They are pretty fatty, so ive never really had them get dry or tough.

Slice them in thin strips, marinate in some salsa verde with lime and sear them in some cast iron for fajitas.

No raw product shots but finished dish. Christmas dinner in our house was a Costco gourmet special. USDA Prime Tenderloin steaks (6-pack) and the $33 dollar black truffle kit (2 jars of whole summer truffles + truffle slicer). Steaks seared in cast iron then topped with a sauce of black truffle, shallot, butter, brandy and smoked salt.

My costco sells two kinds of TP. Kirkland brand and the Charmin. One has thicker sheets but they kind of tear and ball up on you when you wipe. The other doesn't do that. I can never remember which is which since it's about two years between purchases. And when you choose wrong, it's a two-year mistake.

Charmin balls up. We switched back to Kirkland.
