    It's actually fun to tweak. There are many types of chi, most people are used to the napa version. Krautchi is fantastic too. And yes, I made that up so google probably won't work.

    Almost anything. Easiest thing I do is hash browns with a couple of fried eggs and kimchi.

    How do you guys eat it straight? Is it temp dependent? Quality?
    Usually if I get too much without some other texture involved it feels too much like

    Realized I've had this cookset for about a year now. I'm a reasonably able cook and have dug it. If you've got a piecemeal collection of great cookware, no need. But it often goes on sale to about ~$175 where it replaced most of my meh pieces (everything except one non-stick for eggs and collection of cast irons) with far better.

    Also a nice gift to someone who is getting into cooking more, a kiddo, etc.

    Also eat it by the fork. I have a jar in the fridge that is kind of tough like it wasn't fermented long enough or whatever magic happens to make kimchi kimchi. Not an issue with the previous jar.

    If it’s a little tough, just give it a quick chop. But yeah, the good stuff is usually pretty tender IME.

    Thank you for answering succinctly since I was too lazy to google. I can see adding it to ramens or soups & stir fry. I don't usually eat a lot of cabbage except for freshly sliced on tacos. Time for another trip down to Eagle Costco so I'll look for it.

    oh yeah eggs and kimchi is a staple. try slice of toast+nut (peanut or almond are my gotos) butter + kimchi. apple on the side. pretty solid breakfast.

    I eat a lot of sliced avocado and I'll often spoon some kimchi over the avocado (in lieu of tajin or salt or chili crisp).

    It's good anywhere you can use slaw as a condiment. Or stick it on a burger. Or use it as a side with Korean BBQ.

    This is a bit shocking. My good friend's wife is Korean and when its on to eat at any of her families gatherings its there in copious amounts and doesnt last. Funny too as her moms kimchi will blow your lid off if you dont pay attention to the portion

    I recently went to the Costco in Kauai and found some really incredible refrigerated ramen in their Asian section. I was blown away by how good it was. The package said it was made in Honolulu. After trying to figure out what it is called I think it is Sun Noodle Shoyu Ramen.

    It is unfortunately not available at the nearest Costco to me in eastern Idaho, but it is a definite buy if you ever come across it at a Hawaii or west coast Costco. It's by far the best store bought ramen that I've ever had. Looks like it can be purchased online- https://sunnoodle.com/
