I honestly think they tour and ski fine for what we do. I also prefer the control of a cable binding for the skating, skipping, scootching and sketching we do trying to beater our way through the woods in the Low Sierra for the snow surveys. Even the long tour, which is usually 4 days and 3 nights, doesn't require a ton of real climbing, nor does it offer much in the way of turns. It's mostly a 60 mile low angle downhill meadow skip from the crest to 6500'. We can actually do the whole thing without ever using skins with skis like these. I'm digging this setup.
+1 on the extra parts/ repair kit. I've seen several pairs of those bindings loose the rivets that hold the duckbill in place. Gonna want to be prepared if you're going on that long of a walk.

And sweet gig indeed, have you read the book about that yet?

So speaking of fishscales, when putting an AT binding on, what's the thought process on offset (relative to suggested boot centerline) mounts? I'm planning to remount a pair of Rossi BC125s for my wife, due to a 20mm bootsole difference. I think there's already one other set of holes in the ski, so I'm hoping to get away with just moving one end or the other (ie. just heels or just toes). Does it matter if she's -1 or +1cm?

1+/- shouldn’t matter all that much, maybe lose a bit of kick depending on technique and weight.

I think -1 would be better for grip with an at boot (wouldn’t that put pressure more towards the center of the pattern?)

x2. A stiff boot sole means the kick is coming mostly at the toe. so for grip, a cm back would put it deeper into the kick zone

I just mounted a pair of wide BC XC skis with Rotefella BC bindings. Used the balance point per the binding instructions. Here's a good article about the choices:

I've mounted my Comforts in 3 different locations over 4 cm on a 189 Outbounds 112. Right now they're at boot center CRS. 109cm back from the tips. I hope sometime to find someone who can ski and has a 304ish boot to see if it's right.

And where did you put the boot center?

The mounting template for the NNN BC binding puts the Toe Bar just behind the balance point of the ski. Which for a XC ski works to let the tip of the ski pivot down when you lift your foot. Making it easier to step turn etc. I'm not sure it sets up the ski for the best alpine turning but, I make a lot of alpine and sometimes tele turns - whenever the snow and terrain allows. Seems to be ok but Ive never gotten deep into moving bindings up and back in my 40 years of skiing.

Do a search for the Rotefella NNN BC mounting template. You'll see how they want it set.
