That's an awesome 10k post.
@ 2martinis, another great place for the wood you're looking for is Berkshire Products in Sheffield Mass.
If Mighty Taco did not kill off half the Mafia, nothing will.
Salt potatoes were known when I grew up in Niagara County. My father loves them. I could never figure out the difference between them and a plain old heavily buttered and salted small potatoes.
Here is a WNY staple potato dish. I. Ever knew what they were called. I referred to them as those cheesy, sour creamy corn flake potatoes. Apparently they are known as funeral potatoes, as I recently learned from my 82 yr old mother.

When Taylor was getting lost Upstate, where was she?
"Let's be careful out there."
So it appears as though bagels are actually true Upstate cuisine

You are definitely Upstate - and most likely in WNY if you know about LeFrois Sauce.
Reids drive in Lockport, made this stuff a house hold name for at least a few generations Niagara County residents who often just refer to it as "Reids Sauce". This stuff is great on burgers, dogs and fries.
The problem is it's availability is hit and miss - mostly miss. I used to pick up a bunch when I was out in WNY - but the last few trips it has been non-existent. Can't find it at Wegmans or Tops.
Anybody out in WNY a fan of LeFrois and happen to know where a guy could find some these days?

The ROC doesn't know about Reids/LeFrois. Never heard of it.
not in cny either.
It is a very unique sauce. Hard to describe but is tremendous with a splash of catchup on burgers, dogs & fries. At Reids in Lockport you order by simply stating what you want without any extra words. So a typical order would be stated " 2 cheeseburgs slice sauce - red hot sauce fry sauce onion ring sauce."
I fear they might have gone out of business. It was/is made by the Jets Lefrois Corp on Brockport. I may have to call the Company next week to find out if anyone picks up the phone.

Reids is worth a trip from Rochester on a nice summer day from the west side of Roch along the lake. It has a 1960s feel to it. You can imagine the generations of.little leaguers who have eaten post game burgers, dogs and shakes as you order.
The food is dirt cheap and pretty good. The patties resemble McDonalds patties, so order a ton and enjoy. You can always circle back by heading north to Olcott and hit Byes popcorn on the way back to Roch.

Shoe leather for bread = grinder

IME, Grinder bread is generally light and fluffy, and toasts well. Perhaps yours were just stale?
Forum Cross Pollinator, gratuitously strident
Maybe on those rare dry days but those don't happen in the eastern Upstate zones like in VT or CT
Koffee Kup Bakery. Fucking awesome grinder and sub rolls. No shoe leather. There was also Bouyea-Fassests Bakery in Shelburne, VT.
because we're in upstates?
my outstates adventure ended on a high note:
^ found this on the way out of the capital district (iirc was mentioned early on)
^ turns out the Lupo's makes a great rack
^ Sterling Mountain at smuggs
^this one is multi-faceted. note the boy's hat; and the split-second timing of the disaster beyond
^finally located Messrs Topper and Banger
I'd say it ended well. Back to teh upstates.
