I posit that there is no hard border to the upstates, I think it is more like a good acid or shrooms trip where there is no on/off switch for a beginning or end, but a gradual awareness of clues and signs that things are changing.
Some people have more awareness of the changes occurring and some areas will send stronger signals that things have changed rapidly and clearly, other places and times it is more gradual and subtle.
One thing is certain, when you are deeper in it, and let it wash over you, you know you are nowhere but upstates.

I'm actually shocked to learn that salt potatoes are not a thing everywhere. It never occurred to me they were Upstate. I thought they were ubiquitous.

You shoudl not worry about salt potatoes and health concerns in the upstates. There's no way they could hurt you, because there are 10 other foods that'll crush you first...

Two of my college housemates were from the Syracuse area. That’s how I learned of salt potatoes. I think we’ve been through the soda/pop debate in this thread… before college, I never knew people in my home state didn’t call it soda.
