There's literally a bar on every block in the residential neighborhoods. Bloodies are famous as Maz said. We had fun in the Brady Street neighborhood, it's pretty funky, lots of little restaurants and bars. The Art Museum is a cool structure, more fun to look at than go through though. Harley Museum was aight I guess. It was raining out so it was better than getting wet. The whole 3rd Ward area is pretty happening, an old warehouse district near downtown that's being redeveloped, worth a walk though.
My daughter graduated from Wisconsin 2 year ago, we decided to spend 3 days in Milwaukee before graduation because when would we ever come back? It was a day too long probably.

+2 for the Safe House. There's a secret code to get in, but I can't tell you. Offer the guy at the door a cigarette and he'll let you in at least that worked for me a while back.

Water Street Brewery for fairly good beers and the downtown hotel with the rotating restaurant on the top floor (can't remember the name). The old Theatre downtown has some good shows/plays if you're into that kind of thing too. The Marcus Amphitheatre at the Summer Fest grounds might have a show while you are there too.
The north end of Milwaukee near the lake and UW-Milwaukee has a cool vibe to it, used to go up there to a cool little coffee shop, I think it was Gil's. Just don't go too far west of the railroad tracks in the north side or you end up in ghettosburg and Jeff Dahmers old "stomping" grounds.
Check out a Brewers game at Miller Park, go to the Domes, or a tour of one of the macrobreweries and drink beer after the tour.

I'd like to go out on the lake, I've never been in a boat on a Great Lake. Weather was too shitty when we were there though.
This would be an interesting way to get out on the lake. (edit- especially when the thing can sail straight up the waterfall! stoopid photo)

If you have a car, the drive up from the Summerfest site along Lake Drive has a ton of incredibly cool mansions on it. Stop at Pandls for a drink and fish fry.

Also good shipwreck diving if you are into that. I don't remember who we used.
Lakefront Brewery has a fun tour. Do the early tour, drink, sit outside and drink, then take the riverwalk all the way back downtown stopping at innumerable pubs on the way back. We took all day to do this once and it was a blast.

If you escape the conference early, the Mitchell Park Horticultural Conservatory (The Domes) are cool but close at 5pm. The Schlitz Audubon Center is on the lake 20 minutes from downtown, but they too close at 5pm. Brewers play the Indians on Tuesday night. Art Museum is cool.
Driving north from downtown along the lake is scenic, some big shacks to look at.
Dining- for thin crust pizza go to Zaffiro's on Farwell Ave, near Brady St. Fantastic, second generation, family owned bar/restaurant. Conejitos on Virginia St and 6th St, for mexican (get the 4 chop meat and a side of beans, wash it down with an ice cold Miller High Life). More upscale, go to Odd Duck, seriously excellent food, about 10-15 minutes south of downtown in an area called Bayview. Closer to downtown, Camino has amazing food served late-night for cheap and Morel, next door, is supposed to be fantastic.
If you want to get some local bar vibe, head over to the Uptowner, on Humboldt and Center. A couple of blocks away is a place called Foundation. Both in the Riverwest neighborhood.
If you get down to the lakefront, bring something warm to wear. It can get ridiculously cold. McKinley Park/Marina has the Breakwater that you can walk out on, get a different view of the city.
