Where do I go in Feb?

My wife is turning 40. I'm keeping her. I want to go on a trip somewhere mid/late February and am soliciting advice. Prereqs: not too far away, not completely gouged on lodging.

    Hot

Mexico - obvious choice with the number of timeshares I own
    Where the fuck else?
    - I'm in Hawaii every year to see fam so not on list and also long flight
    - Palm Desert? Sounds boring
    - Fuck Florida unless maybe the Keys? (and I'll have just flown back from Orlando so my soul will need some time to repair)

    Cold

She skis but doesn't really care about gnarly terrain, etc. Frankly, I need something idyllic. Quaint town, snowshoeing, good food? Someone have a recommendation for some quaint lodge somewhere? East Coast fine. VT? CO? Standing Rock Reservation?

You can get a house on your own private island in Belize for not a crazy amount of money. Airfare getting there is a little steep, but if you have frequent flier miles it can be cheap (and the flight from Houston is surprisingly short). Hire a cook, stock up on beer, fish for bonefish out your back door.

You can't get more quaint than an inn somewhere in Vermont.

Have you been to New Orleans? It's nice in February, no hurricanes, humidity, whatever.

St Regis Deer Valley will keep her happy.

Into wine? It's offseason but Meadowood Napa Valley is outstanding.

    Charming? Quebec City/Montreal

Old school gulf south that no one really knows about with great wilderness (and very affordable) Apilachicola FL.

Golf? The Ritz at Reynolds Plantation GA on Lake Oconee is a fantastic lodge even if you don't golf.

Excellent food in a gorgeous city with no crowds and humidity? Book a room at The Vendue Inn in Charleston and eat your way through the amazing restaurants in the city.

Seems like there's always deals on Aruba these days that wouldn't break the bank if you want Caribbean.

Warmish: Callistoga, CA - Quaint, great food, great wine, spas...
Cold: Crested Butte has surprisingly good restaurants, reasonable lodging, and a quaint little mountain town

If far away is OK, Paris is is redic cheap in Feb.

Somewhere hot in February? Snowshoeing? This is a ski forum, ya know.

Cold, not gnarly: Destination resort with mostly intermediate runs and nice/cute lodging, hot tubs, romantic dining, e.g., Sun Valley, Sun Peaks.
