I vaguely remember following a road out of the north end of the park into nat'l forest land and camping sometime back. It was probably the Grassy Lake Road:
can't remember the road but google maps should find it, there was something over in wilson just south of the pass road
Back in the day you could camp off Pacific Creek Road up near Jackson Lake, north of hwy. 287 past the Moran Entrance Station. There is a pay campground but I think you might be able to find dispersed camping too.

although with the rain they could be muddy
As you go north in GTNP on hwy 191, you will see a pull out for the Cunningham cabin historical site. Its about 25 miles north of town and maybe 5 miles south of the turnoff to Yellowstone. Directly opposite of this pullout is forest service rd 30310 and it goes up into the national forest to some low foot hills with several hilltop campsites that feature excellent elevated views of the Tetons. No amenities, but no fees either and its barely a 5 minute drive outside the park. Easy to see the sites with google maps. These are really sweet views but note well: (1) I wouldn't want to be sleeping on a bald hilltop if lightning is in the forecast and (2) yes, its definitely grizzly country so have spray in your tent.
