Bumping this because I'm in Hanoi with my family eating the most baller Pho on earth. Stateside pho has nothing on the real deal.

I've heard that the Vietnamese usually eat pho for breakfast.
Best Pho I had was in Houston, TX.
For some reason there are LOTS of Vietnamese people in Houston.

Naturally, Vietnamese food was phenomenon.
I've had some good Vietnamese food in the city (Manhattan), but haven't had anything like ones in H-Town.

But it's not just beef noodle soup. The broth is all about the awesome spices, fish sauce, charred onion and ginger, etc. and there are plenty of versions in Vietnam and elsewhere that don't use beef.
That's like saying we should just call coq au vin, doro wat and tikka masala "chicken stew." Kinda misses out on some important details.

our kids have always been adventurous eaters. They don't care for pizza, Mac and cheese or French fries. They'd prefer Vietnamese, sushi, Ethiopian, etc. my wife (who isn't Uma Thurman but is a tall leggy blonde) is an amazing cook and that's just the way we eat. No need to dumb it down for them. In fact, before we left for this trip, Pho was their favorite food. This journey has reinforced it.
And yeah, pho is eaten at all times of the day here. The place where that pic was taken (Pho 10 on Quoc Sur in the Old Quarter) is open from 5AM-11PM. The family ("homestay") where we are staying serves pho every morning. And it's delicious.

Very cool. Thread inspired me to get the best bowl in town tonight. They have the best broth. No congealing of fat pockets as it cools. They use huge hunks of beef to make their broth instead of bone. All angus everything. No msg, all fresh, that kinda thing. Always thought you needed bone to make broth.

Ah. I misunderstood the initial comment, I thought it was generally objecting to the name. Giving it different name for kids makes more sense. Hell, my father in law refused to eat pho until we called it "brisket soup" and then he dug right in.
But for what it's worth, my 6yo loves coq au vin and tikka masala, as well as pho (doro wat is too spicy, though).

I live in a small tourist town surrounded by overpriced Greek restaurants, Pizza joints and mediocre family restaurants. We have decent Korean but its pricey. Same for sushi. This thread made me jealous and hungry.
