Solid beta on the xanthan gum, I've been looking for a good thickener for a while as all my sauces come out a bit too thin to be perfect. Gonna give it a try this year!

Wow. Definitely leaning to center and looker's right. The color of the one looker's left creeps me out a little. If you're sensing a theme, it's a bias against colors that remind me, even remotely, of times I've thrown up. It's a personal thing. I'm sure the flavor is all there.
