This thread continues to deliver. Oh, yeah, you gonna deliver?

At this point I will add a UP style pastie to the dance card, along w/my previous nacho suggestion, and second the tamale thought...

Alright, boys, I put in a pretty good maggot reference. Came up with a wing sauce that is kinda sweet/savory, with the major flavor bases being BBQ, honey, cumin, paprika, white pepper, celery salt, and orange zest...but the 'secret' ingredient is A1 sauce.
It will be know as FKNA-1 sauce.

    That's for you, Splat!

Tamales...man I love em'...but have you ever made them? What a mother of god PITA, unless you have a whole family of short, hairy abuelitas and chiquitas to do it.
We currently don't have (can't afford) any kind of real broiler or salamander, so melted stuff will have to come later. Did I mention that we didn't even know we were doing this until a week ago today?

That said,I will likely get in touch with my pizza freak roots by doing a massive calzone, the size of your head for $10.00 or so. Fresh, local sausage, fresh basil, my own marinara, good ricotta and mozzarella, you get the picture. A multi-lap hunger-crusher.

Tequila Lime is a pretty good flavor for wings. I've used this as a decent starting point.

For cold days, some Pork Green Chile or Tortilla Soup can hit the spot.

I'm gonna hit up some Asian grocery stores this fall and try making some Hot & Sour Soup, authentic ingredients might be hard to come by around Jackson but good H&SS is a beautiful thing.

A favorite recent app was at Mizuna in Spokane. Do you have a solid bloody Mary? If so, dress it up in a bigger glass for 2 (bigger goblet) w salt on the rim, throw in asparagus, shrimp (easiest seafood/meat to cook), Olives, etc. it's an alcoholic app that's great to drink!

New item, hand cut, Dunn ranch grass fed NY strip sandwich with either fresh Argentinian chimicurri or bourbon/mushroom cream sauce on local soft sourdough rolls....

    Rideit-

A basket of deep fried bacon would be a hit.

Homemade small sausages, (a few varieties), with a mustard sauce and a cheese sauce on the side. Simple but tasty.

Do up some of your green chili. Serve with homemade tort. chips.

I'll be there Thursday...maybe all day, eating wings.

Just had some sweet chili lime wings and fries from Rideit. Go get some! Fanfuckingtastic . Might have to sample a different flavor along side a FrankenBaconBurger for dinner.

    Nice Work, Rideit!

No, because a lot of the suggestions don't scream stagecoach to me. And I bet a hell of a lot of people have visited J-Hole. You don't have to live some place to know of something.

pictures of people mid-dancing are hilarious - like when you see a behind the scenes movie shoot and the cast is dancing along to no music at all...

anyway, from your photos, I see and share your concerns. Foie Gras stuffed dates just isn't going to cut it there!

Now folks are getting it! But we ARE in the milfiest zip code in the world, so I need the grilled eggplant and cucumber-avocado cold soup to get their panties wet, too!

I have been and still suggested beef wellington so there. In fact, one of my best friends was a line cook (probably a really bad one actually, no offense, chuck. heh) for a little while back in like 1991.
