At 5'9", 160-70 lbs when I worked in bars it was easy for me to move in the crowd. If people know that eyes are on the floor or in the pit things tend to stay calmer. Intimidation and quick back-up can shuts stuff down quick, even from a distance.
IF the shit hits the fan the job of the door staff is to divide and remove the fighters, while protecting the guests that aren't involved, that's it, and throwing punches on the clock is never a good idea.
I'd also never use a choke hold for legal reason, a half nelson with a pressure point or an armlock can get most people to move towards the door, let the true gorillas on the staff take care of the big boys. A good door staff also has the advantage of being sober and experienced at all of this shit and working as a team and the people they are dealing with are the exact opposite.
Having some staff rules/protocol is always key- Who covers the bar? What does the band do? Do you have a legal responsibility to call the cops? (flat out assaults and beatings) Can the staff handle it or do you need back-up? (Why do you think bouncers always drink for free at other bars?)
I probably don't know what I'm talking about by today's standards, because that was long ago, but as always there are 1-2 man staffs in nasty clubs that are just balzz out, and big mega clubs with 50 SECURITY guys, but I'm taking about a reasonable mid-to large sized club or theater that exists in almost any decent town.
...and they played 4 yrs. of college football, undrafted, but made the cut and earned the NFL league minimum for 2 years. Now they date a stripper and "own" part of a bar. Weird sub-culture there.....John - the muscleheads get the Bently $$ from selling riods, not bouncing.

I make $60 for 10pm to 2-2:30. I am 6'4" 280... more fat than muscular at this stage. I think it does help to be big just for psychology and for bulldozing people away from one another. There's no bentley, I don't know wtf that's all about...coke dealers? I got this job because I'm a square and they know they can count on me to leave the female bartenders alone, stay sober, and deal honestly and fairly with people. I started wearing a cup and I feel like 100X better wading into brewing fights. Ups and downs....up: people-watching, down: having to hassle with drunks and having to clean up at the end of the night.

I worked in this one place where the king of the bouncers, or whatever you call that, had a 427 Cobra. I asked him if it was real, to which he replied, "OF COURSE IT'S FUCKING REAL!" After that, I'd tell new-hires to ask him about his Cobra replica.

I think you have me confused with someone who is far less awesome.
Bouncer or not, you need to put on some weight. There is a correlation between muscle mass and quality of life in the later years. After about 40 the body starts losing the capacity to build muscle and bone density. It's good to have a head start and try to maintain it as long as possible through resistance training. Doesn't mean you have to become a body builder but most people benefit from a little weightlifting.
