    Liquor won't get any better once it goes into the bottle. It's not like wine in that respect. If you open it for a drink now then it will begin slowly deteriorating and will eventually taste funny. If you leave the bottle sealed there's a good chance that it will be more or less the same as it was when you bought it though you'll probably get some evaporation though the cork.

    Some wine will keep for 20+ years but none of them will hold up for anywhere near that long unless they're stored in a proper cellar with temperature and humidity controls. If you don't have a wine cellar in your basement then wine is probably not a good choice for this project.

    Vintage port, since it's sweet and fortified, will hold up quite well for 20+ years and will be a bit more tolerant of less than ideal cellaring conditions due to the fact that both the high residual sugar content and the relatively high level of alcohol will help to preserve it. Dunno if 2011 will be a declared vintage though.

    If I were you, I'd toss a buck in a jar every Friday from now until the little bastard turns 21. Then I'd take the ~$1100 and buy him a seriously bad ass bottle of wine or liquor that someone else took all the risk of aging for you.

    Way more expensive than you're looking for, but it'd be cool to buy a cask of scotch distilled around his birthday... Let it age 18 years then take a trip over to scotland for bottling... Shit like this:

    Even if I had saved the money exclusively for that there is no way I could spend that much on spirits. I'd tell my dad to buy me some red table wine and a round trip ticket to Europe instead. If a bottle had been saved since my birth on the other hand, that would be pretty cool.

    +1 for finding a vintage red or port and if 2011 turns out to be a dud or you want to do a whiskey buy a older vintage with 2011 being the bottling date. If whiskey is the plan put the monies in the bank and buy a 2011 whiskey in 20 years which will probably be better than just chuckin a bottle in the cabinet. Check http://www.whiskyfun.com/ if you want to look at vintages and how long stored bottles can end up meh or money.
    The wines will need appropriate storage unless you plan on opening a bottle of vinegar.

    No such thing as a vintage tawny port... they're all rated by their age (ie 10yr, 20yr, etc.)

    My daughter has a bottle of 2000 Taylor Fladgate waiting for her in my Wine Cellar. My son Has a 2003 Warre's. We'll drink them at their College Graduations.

    Well little man decided since I already had the scotch in my possession that he might as well get the party started. he was 3 weeks earlier than expected but still was 7lb 9 oz, 20inches or so

    less than 2.5 hours of labor

    Wow! Congrats, man! Hudgest thing I´ve ever done is having my daughter. 66 hours of labor, though, and yes, I was very tired afterwards.

    I would buy two bottles of Laphroaig ten year old cask strength. It is the ultimate single malt. Start one now, save the other one for 21st bday. You´ve deserved it.
