D00d your binders are way outgunned. That's a "light duty" binding, it doesn't even go to 12. You need to be on some heavier duty bindings and make sure they're adjusted properly. Start at the recommended setting and go up gradually by 1/2 DIN stop at a time until you find a happy medium. Don't turn them up when they pop once, give it some time until you're sure you're consistently releasing inappropriately.
Your skis are probably outgunned too, IIRC, the Gun is pretty soft. You're a big guy and could probably benefit from a stiffer ski. Overflexing and extreme rebound of your ski can cause release by exceeding the bindings' ability to react to those forces.
FWIW I'm 5'7", 140 lbs and ski my 916s on 11. I release occasionally, and appropriately.
