    WTF is Safeway?

    Bouillabaisse uses Saffron, where Cioppino does not. Pretty much the only difference between the two.

    Depends on the recipe you use. Most Cioppino calls for a tomato base, but the one I used called for fish stock... Like a Bouillabaisse. Yields a better broth, which is the whole point of making either.

    The MAJOR difference in the two is Saffron. But they are damn near the same dish.

    if you use a tomato base and saffron is Cioppino. If you use a white fish base and no saffron is Bouillabaisse.
