ah, I was confused because you called it pho. I don't do food pics hence the overstyled google pic, but my lao family run place ladles on more spicy, usually has more "interesting" bits of meat, and doesn't do the side plate of beansprouts, basil, etc.

Yeah, I just said pho because that's the term most people are familiar with. And I like many of the phos (lol) including the "interesting" bits variety as well.

But that particular place makes really good bun bo hue, so I usually have that when I'm there. Probably the region they're from.

I'm not sure how authentic the bon bo hue I get is most of the places I go to are staffed by laotians/hmong so it's not their "home" food. it is good though. a couple places do a good khao soi
