    Vietnamese beef noodle soup that's generally hotter/spicier than what people typically get when they order pho. If it's authentic, the beef is sliced paper thin and added to the soup raw right before serving, so it's cooked by the broth.

    The reason it's called hue (roughly pronounced "way") is that style originated from central Vietnam, whereas pho supposedly originated in the north.

    I have a hard time finding bun bo hue that's properly shrimpy and comes with a knuckle or oxtail and blood cubes. I don't think it's popular enough at most places for the restaurant to put in the effort. Either that, or I'm getting served a whitewashed version.

    I'd recommend some places, but I just don't go there enough anymore to be in the know.

    i eat it in seattle pretty regularly, even the more trendy spots tend to go toward the real deal. there’s a spot on the main drag through south seattle where the regulars still chain smoke and throw cash on the tables.

    I found the Vietnamese food and especially the pho in Seattle to be lacking. I was shocked.
