    This w/e I teed up an irish stew for 15 hrs. in the pot only to dump it into a pie crust, top with smooth buttery homemade mashers and have enough shepard's pie to last 2 post ski dinners for 2. Oh yeah, there's those 2 big packages that I vacusealed for down the road sometime.

    I'm a straight up McGuinny. 50/50. Hell, my Dad's still not even a citizen.

    BD4A: I start by marinating the meat of choice (lamb/venison/elk/beef/wabbit) in 50/50 what ever leftover red wine I may have and Guinness. Add a bit of Better Than Bullion too. Start there for a base (S&P, eyetalian parsley, shallots, onions ....)

    A brisket caught my eye this weekend and cooked it up in the crock pot

    Rubbed the brisket with a spice rub and seared it on the grill over high heat for a nice crust. Took it off the grill and coated it generously with brown sugar and mustard. Rendered some bacon and sweated mirepoix in the bacon fat, deglazed with some beer and added all of it to the crock pot. Set it to low for 9 hours. Removed the brisket, strained out the mirepoix and reduced the leftover juices. Served it with some horseradish taters.

    got this cooking as we speak, anxious to see how it turns out. got it off the intraweb, so it's nothing too advanced or exciting, but it should turn out good enough for my roomate and myself to enjoy. also, there are only a few ingredients, and a lot of people may already have them in their cabinets, which makes it easy to whip together on a whim.

    6 porkchops
    20 oz chopped pineapples
    teaspoon of soy sauce
    1/4 cup brown sugar

    put porkchops in plastic bag (gallon size)
    mix other ingredients together and pour over chops, let marinate in fridge overnight
    put in crock pot on low for 6-8 hours.

    i plan to garnish with a pineapple circle on top, any suggestions for side dishes?

    Its that time of year again. What are some of your best and cheapest recipes? We just cut into a pork loin roast I started this morning. So fucking good and it cost us like 7 bucks for all the ingredients.

    Made moose ribs the other night with the pepper recipe. Turned out nicely.

    Need to repair my smokehouse (and for the temps to get above negative 12) to get the full crockpot-smoked-grilled ribs going!

    Chili with Black Beans and Bacon

    recipe is inspired by cooks illustrated. I have a crock pot where the inside part can be used on the stove or on the crock pot heater, so it makes this one easy. A dutch oven would be best.

    2 normal sized onions, diced
    1 red bell pepper, chopped
    6 cloves of garlic, minced
    8 strips of bacon, cut into 1/2 inch pieces
    1/4 cup chili powder
    1 tablespoon cumin
    2 tsp coriander
    1 tsp crushed red pepper
    1 tsp oregano
    1/2 - 1 tsp cayenne

    2 lbs ground beef, 85/15 works best
    1 28 oz can diced tomatoes
    1 28 oz can tomato sauce or puree
    2 16 oz cans of black beans (rinse and drain)

    1. Fry bacon in a skillet (or dutch oven) until browned. Pour off some of the grease, but leave enough to cook the vegetables.
    2. Add onion, pepper, garlic, and spices. cook over medium heat until onions are soft. Add beef and cook until it isn't pink. Stir often.
    3. Put meat mixture into crock pot and add beans and tomatoes. Add salt and black pepper if you like. Cook on high for a few hours, add a little water if it gets too thick.

    Serve. It's good with some avocados and a little lime.

    if you like spicier chili, add some diced jalapeños with the onions.

    I live alone and have a mini-crock so most of those sound great but just don't work for me. I just toss some chicken in, a broth cube, half an onion, celery and water and cook all day while I either ride or work. Come home and either eat it, or add some brocolli or baby bok choy or squash and simmer another few mins and then eat it...pretty damn good.

    Chickpea soup
    1 & 1/2 cup of chickpeas (soaked over night)
    1 good pinch of salt
    1 can of dice tomatos
    1 garlic clove (chopped)
    1 onion (chopped)
    1 smoked pork hock
    2 sticks of celery
    1 tablespoon olive oil
    fill with water almost to the top

    click it on 10 hours, serve with a crusty bread.

    I always sort the recipes by highest rated, look at the ones that have been cooked many times (many 5 star recipes haven't been vetted by many), then read the reviews to modify the recipe.

    I just made them again. So good. But I think I need to up the spices, the flavor is not as strong as I want.
