You'd have to point the mx record for your domain to your box on the dns server. Afaik most isps are reluctant to do so due to spam, and if they do you'll probably be blacklisted.

If you just want to do Pop3 pickup on a regular interval there are some 3rd party packages that will handle this for you.
I'd have to search to make sure the ones' I've seen in use and recommended support the Exchange 2007.
Depends on the type of connection used (DSL and Cable modem business class types) and some other factors. Some will want you to "smarthosting" as it is called where the mail comes into your Exchange server but when you send the outgoing messages you have to hit their SMTP server and send that way. They blacklist for things like not requiring authenication or open relay on your server for messages, etc.
Many SBS boxes out there are doing Pop3 pickup (it is built in to that version of the MS Server only).

One called PopBeamer was recommended by a number of persons knowledgable in a thread I found. I did not check for Exchange 2007 support though.
My ISP offers mail bagging where the mail will run through a spam filter and they will catch mail if our server goes down and store it until our server comes back.
