hey steve, you ever been to the porter house in montvale? it probably cant compare to peter luger, but still a good piece of meat in that place...and close by.

If any of you guys go to Jackson, try Paradise Valley Meats (They are from Montana) store off broadway across from Hoback Sports, they have some of the most tender meats I've had in a long long time. The place I work in the summers (Signal Mtn Lodge) in the GTNP serve Paradise Valley meats in the fine dining restaurant.
Always charging it in honor of Flyin' Ryan Hawks.

what was a "2nd tier" argentinian steak house? the defining thing of BA then wasn't that it was the absolute bestest steak in the world (perhaps one of), but that you could get an extraordinarily good steak for dirt cheap.

I read this book - was interesting if you like this sort of thing
which lead down the path to me getting closer to understanding the relationship between marbling of fat, texture of the meat, flavor of the meat, and how grain vs grass (or grain followed by grass) effects all these characteristics
the author's conclusion (which maybe you already all know) is that you can easily get marbling with grain feed - and that will lead to a desirable texture - but it will not impart much of a taste to the meat - if any at all.
You can get meat with a lot of taste with grass feed - but it's hard to get the texture right because it's hard to make grass fed meat marbled - and also that grass fed meat may taste amazing or gross (or somewhere in between) depending on the type of grass.
The hard part is to feed a cow only grass, have it come out marbled, and have it taste good.

I’m in the rare to medium rare camp depending on the quality of the beef.
I’ve had two very surprising exchanges with folks about well done beef over the years. The first was a number of years ago while attending a conference at Snow King in Jackson Hole. Went into the restaurant and ordered a medium rare burger. Waiter told me that it was against WY law to serve burger less done than medium well. I remember remarking to my dining companions that they got some pretty candy assed cowboys in these parts.
Second was a family barbecue at which some nice steaks were being served an Uncle and his wife who was a life long resident of Abeline insisted on having hers well done. Being a curious fellow I inquired as to why she didn’t eat here steak raw like all the other Texans and she told me that was a bunch of BS. I didn’t call her candy assed cause she was that particular brand of classy but hard as nails Texas lady that would have whooped my ass right then and there.Damn, we're in a tight spot!

Cooking our food is really the only thing that separates humans from wild animals. Medium to medium well for me, and hell no to steak sauce. I'm not eating raw meat of any kind anymore. That's only safe if you've got a belly full of alcohol to kill anything dangerous that's still living in that raw meat.
Go that way really REALLY fast. If something gets in your way, TURN!

During the college gigs working in hotel banquets, we would get the Alberta Cattle Ranchers Association every year. To a man, every one of those good ol boys ordered their prime Alberta beef well done. They know the shit they pump through that industrial finished beef.
I prefer mine rare, but only if I know the source.
