There's probably marginal difference in safety.

Plus a good steak tartare is worth the couple of hours of worry afterwards.

It's uncommon for restaurants around me to allow patrons to bring their own homemade ground beef to be cooked by the staff.

And I basically never cook a burger at home, 'cause I'd rather have a steak.

    YMMV.

Probably - but let's face it, burgers are probably a pretty poor place to roll the dice.

I've rolled the dice on this a couple times. And it was worth it. Still don't think it's worth the risk for ground beef, but then again, I'm not ordering wagyu beef burgers when I'm out...

For those worried about e.coli in their ground beef, there's evidence to support that mixing a unit of ground beef with 5-10% powdered (not 'prepared') black or brown mustard seed will kill the e.coli. Apparently, only the most sensitive of princesses will notice the addition of the mustard to their burger. It seems even the greeks, romans and chinese knew of this to keep their meat from going rancid.

"Hey, do you guys put powdered mustard seed in your ground beef?"

My experience at restaurants is that if you ask for a burger med-rare it will arrive med-well. If you ask for it med/med-well you'll get a hockey puck. YMMV.

Yeah not sure if you're kidding but that stomach full of booze is not gonna do anything.
