For a beef steak from the loin....define "rare" by color and temperature.

Loin = Sirloin or ...shudder.. Tri-Tip? Generally that's too tough for Cold Red Center (rare) - a Warm Pink (Medium) is best IMHO.
For Ribeye (Delmonico,) Porterhouse, or Strip I prefer it barely cooked to the point of the marbling fat rendering. SO JUICY.
Tenderloin just sear it and hand me the sea-salt and fresh ground pepper.

I only cook it so others dont think Im some sort of weirdo. Just put it on the grill for a little color- give the steak a tan if will- and eat it. Little tough to chew sometimes

municipalities that prohibit restaurants from serving my cheeseburger rare.

Rib-eye Pittsburgh style all the way. Right on Flexon and DisArray. Nothing beats the pan seared charred outside and velvetly red inside.
Best pittsburgh stlye steak in philly is at the Barclay Prime (just in case any of you happen to be in that city and want a killer steak)

I like it medium rare but with the fatty parts all crispy-like...not chewy.

It best be bleeding all over my plate as I am eating it.
I never understood how people can eat well done steak. Then I realized that is the purpose of steak sauce. To add flavor to that hunk of charred mess.
I hate when people try to say "Well, isn't eating rare red-meat bad for you?"
Go get a damned education.

I eat rare, bloody, steak at least once a week.
I drink 2-3 cups of coffee a day.
I have also fire up whiskey at least once a week.
I could shit through a screen door at 20 paces and not touch a wire.
I think my colon is operating just fine...Bush got C's.... Obama probably failed lunch

Ordered some steak tips marsala last night. Asked for them rare in fear of anything other...they came medium well.
