    Wise ones: my batch came up half a gallon short. Are there any draw backs to adding 1.25 cups of priming DME to .5 gallons of water instead of just 2 cups?

    The brew is a heavy duty high gravity holiday ale...

    This will be an APA as I was just using up some grains I had on hand. 3 gallon batch - 5lbs pils, 3/4lb wheat malt, a hefty shake of munich 10.

    Hopped with centennial, cascade, and citra I already had in the freezer.

    This yeast is a phenom! Started bubbling within a couple of hours. Keep it warm.

    Made a ~2% table saison with the second runnings from another saison. About 40% wheat with a tiny bit of rye added, hopped with frozen hops from my friend's yard. Pretty tasty even without carbonation, I thought about adding fruit or hops but I think I'm content to bottle it this weekend. Click image for larger version.
