    False pilsner? Did you use ale yeast or lager yeast at ale temps? Never heard the term before.

    100% pilsner malt, German hops, clean ale yeast at low temps. Not a true lager.

    Sounds like a Kolsch, no? Or Kolsch-style, since I assume you aren't in Cologne and probably aren't filtering. Call it a Wieß! Sounds much fancier than "False Pilsner"

    If I pitched a Kolsch yeast, then yes.

    However I used Nottingham, so it's not really to any style (maybe a blonde). I'm calling it a P'ale'sner for the party.

    Kolsch strain isn't required for it to be a Kolsch, it is nice though. Some brewers don't even use an ale yeast.

    Pretty fired up on how my NE style hoppy pales and IPAs have been turning out. Still dialing in the water profile and IBUs (I've been using Hop shots and need to be adding more to the higher gravity beers) so they could use a little more bitterness to balance them out but it's so nice to be able to drink this style of beer without donating a kidney or paying crazy $$ for shipping. Very juicy with tons of Hop aroma and taste but lower bitterness and a very soft mouthfeel. This one is 6.7% with Hop Shot, Amarillo @ 10 then Amarillo, Citra, Mosiac at flameout, 20 minute whirlpool, and 5 oz Mosaic/Citra in dry hop in the keg. Smells almost exactly like Pineapple Juice. It's nuts!

    Got an all NZ IPA about a week into fermentation. Motueka and Nelson, smells great.

    Brewing another one tomorrow with all the "space" hops. Galaxy, Apollo, Comet. Grain bill more reminiscent of SOS or Heady. Most everything I've been making so far is based of Trillium's profile of 2-Row, C15, White Wheat, Carapils.

    Gonna try a wet hop pale w my glacier haul in the next week or so. Any special tips? Should I just do a single hop since only have one kind of fresh hop? Was thinking maybe a smash. Just planning on using a 6:1 ratio. One thing I'm not positive on is adjusting my water (if at all) for the moisture in the hops.

    Next week we'll be brewing a SMaSH IPA with some Maris Otter 1823 and some new hops I had imported from South Africa called African Queen J17. That's one way to break in a few new ingredients I've never used before. Screw pilot batches

    Brewed a few weeks ago and tapping today: "Continental Fresh Hop" brewed with hops grown on both sides of the continental divide in CO. Fresh Cascade, Centennial, Magnum, CTZ, and Chinook. Dry hopped with Cascade and Centennial (pellets). All hops were picked within 24 hours of the brew. I think this might be my favorite fresh hop that I've done. Crisp like a fresh glass of "Sham-pag-na"!

    What type of cider are you looking to make? Dry? Sweet? Still or sparkling? A little more info would help.

    Homebrewtalk.com has an entire cider forum if you want to go down that rabbit hole.

    The hops I grew at home made for a pretty bland APA, so I'm trying out dry hopping in the keg for the first time. I've got to try to brew up a few batches in the next week or so, I might not have time for a while.
