the package of thick-cut, maple flavored bacon that i picked up last night after reading this thread has been finished off.

i cooked one half of the package last night and the other this morning. what i found was that by starting off with the pan over lower heat was best, gently increasing the heat as the bacon cooked. imo, bacon shouldn't be too burnt up and so i am careful to create some crispy goodness while also leaving some fatty yummy stuff.

amen to the bacon! next up, the tin of spam i also purchased last night...

also, i have to wiegh in on the whole crispy vs soggy debate. i think it all depends on what the bacon is going with, although i never like it too soft, just a little chewy, examples:
    baked potatoe=crispy
    sandwich=kinda crispy
    eggs, hash browns, vegis mix=softer
    by itself=softer
the bacon wrapping of filet mingon=soft

cooking chicken in a nice sweet but tangy lemon sauce.

Some rashers of salty crispy bacon would be the perfect compliment I think...

I'm shocked and amazed that this thread has gone on for a full FOUR PAGES and no one has shown the love for scallops wrapped in bacon. A party just isn't a party without scallops wrapped in bacon.

I make very good bacon. I put it on a broiler tray and it gets all crispy and good. Don't worry though...it's still quite greasy.

The boys were upset with me yesterday because I got up late again and consequently didn't serve up any bacon for breakfast (and have not done so in several weekends). I have to right this situation soon or they could be looking for a new wife and mom!

    Sprite

Edit: That scallop picture is working me into a mild frenzy!

    Bacon up that Turkey Boy

Every Thanksgiving Day I get my sorry ass up at dawn, haul the turkey out of the fridge, fire up the oven and cover it with a few (maybe more than a few) strips of bacon. Then I slap that pan load of cross species goodness into the oven. (Can't sleep and baste at the same time any other way.)

Then its back to bed for a couple more hours and come down to the best smelling kitchen around. I snack on the crispy turkey top bacon and replace it with some more.

That's it time for lunch. Bacon burger anyone?
Damn, we're in a tight spot!

I love bacon in all forms.

But no love for the BLT people! The BLT done correctly is amazing. Warm bread, warm cheese, warm crisp bacon, cold L and T. Lots of mayo. I mean, can you think of a better simple plesure?
    No.

    Lightbulb Spinach

The only way I'll eat a salad is if it's smothered in Bacon.

Who's got the mean Spinach salad mix recipe?

8 slices bacon, cut in 1-inch pieces
    1/4 cup cider vinegar
    1 oz sliced red onion
    1 tablespoon soy sauce
    1 tablespoon brown sugar

cook it down so the onions carmilize...BAMM!
