I've done a ton of kits and regularly grow culinary mushrooms. Pretty simple stuff, and watching mushrooms flush is nothing short of pure magic. Take a look at these kits here:

Lion's Mane and Oysters are pretty easy and tons of fun. Also had good luck with shiitake.

Yep. Done everything from spore printing to agar plates to monotubs. Just finished printing some mushrooms in my yard - wanted to figure out if they were shaggy parasols or false parasols, thankfully, they appear to be the former.
Working with syringes and grain is fun, but it can be frustrating. And while dung loving mushrooms can be fun, they are pretty basic.
Pic entirely unrelated

WoW started reading about it last week. Thought of it as a winter project in the garage. The whole process made me scared. It all sounded so laboratory and that’s so not me. How hard is it on a scale one to ten.? ( one easy)

Getting some pre inoculated logs is pretty easy to do if you have a supplier not too far away. If you do your home work it can be done at home also.
There is no easy way in reality but with patience and effort anything is possible.
With other styles of growing you do need to start with sterile growing media and be very aware of keeping that way. Proper heat and humidity control is essential.
Learning to forage and identify is a fantastic skill to have and i would recommend going that route first.watch out for snakes
