Pudendal nerve compression.
I'm not a serious rider so I haven't tried different seats. If I feel the numbness coming on I stand on the pedals for a bit or shift my position on the seat. If I do that as soon as I feel the numbness it goes away quickly and I can continue riding.
Same thing with numb hands--change positions on the bars, put pressure on different part of the hands etc.

I had this issue with many seats. SQlabs 611/612 finally cured it. The seats are hard and took a bit for my butt to get used to but they're money for me. Also try running nose down a bit.

I like some cushion, but too much seems to lead to more numbing.
A lot of trial and error was required for me to get the right seat/chamois combo, and I still get numb sometimes, especially on the hardtail.
I like the REI chamois or other minimal ones.
Sometimes on a long grind or a rough trail, it's just hard not to get numbness in the taint or hands. Shift positions. Take a break. Drink water. Try dialing in the positioning of all your cockpit parts.

Sit bone size can be counterintuitive. I have a narrow wrist, but tried many of the WTB saddles over the years and have no numbness with the Pure V, the wider saddle. Apparently my ass to wrist ratio is off the chart

I heard that numb junk for cyclists is mostly reported by incels
