    I've messed up chile verde and other spicy dishes more than once by misjudging the heat of the chiles. I usually have several generations of Hatch chiles in my freezer and I never know how hot each bag is. I like my spicy hot food but I don't get off on eating food too hot to appreciate the other flavors. Chile dishes are tough because it's not like salt and pepper that you can go easy on and add later. With chiles you have to commit. And have some cheese and sour cream handy. Sugar helps too but you can only add so much before you change the dish.

    I think most seafood fits in this category, but chicken parm? Even when its bad, its good. Maybe not amazing, but still pretty good.

    Dishes/foods that are amazing when done right but horrendous when not

    Brisket is my #1 as well. Very unforgiving and it’s usually undercooked by novices. Taking a piece of meat to 200 degrees internal is nerve wracking.

    Soufflé and hollandaise sauce are other candidates

    How is it nerve wracking? Wireless thermometer and wait until it's done. (I like it at 197 in the thickest part. Texas crutch in the oven when it stalls.)
