32 years ago, I told my wife that I don't like hardboiled eggs. She is still asking me if I want one, and then insisting that I just haven't had a properly made one when I decline.
In with the 9.

I’m not wild about congee or cream of rice, but I like Kheer and Risotto.
maybe it’s because I avoid fish when eating out generally, but it seems the error with most seafood meals is at the beginning - using fish that’s not good enough quality/freshness for the dish chosen. Other than choosing a different recipe, there was nothing to do right.

^^ i was in south texas on like a 103 degree day and saw a mexican dude selling ceviche out of an ice chest a rural highway intersection, like where you'd see a watermelon or tomato stand. Kept driving...

In my backpacking days I used to mix instant rice, grated parmesan, squeeze margarine, and onion soup mix and call it risotto. Ironically.
The only way you can make backpacking food bad is if you can't get the stove lit. Otherwise, appetite takes care of any cooking mishaps. (Like dumping the cooked macaroni on the ground and having to wash it and then strain it through a plastic wire scrubber.)

Dishes/foods that are amazing when done right but horrendous when not
Huh? You discounted ice cold ceviche sold by a Mexican close to the Gulf / border? Fail.

Not a fan of crappy felafel.
Soggy, mealy, cold, from powder, oil too cold, oil too hot, so many ways...Forum Cross Pollinator, gratuitously strident

Were fried eggs mentioned? Fried eggs are nasty if underdone.

+2. The difference between good and bad is huge.
Is it possible that the worst and best are both the more breaded variety? The worst is definitely the oil-soaked thick wrapped, but I think I've had a very good one done that way without all the grease.
I've all but given up ordering CR because it's so hard to get a description of what they're making beforehand and I hate bad ones.
