    The Yurt/Hut Food Thread

    it's hut season, and i'm looking to get some stoke/recipes for cooking up a feast in the backcountry. let's assume weight is no issue - what do y'all like to cook in the backcountry?

    in the past we've done -

    - pasta and sauce (basic)
    - steaks/grilled salmon
    - steamed/saute vegetables
    - burritos (breakfast and dinner)
    - margaritas

    would love to find some recipes for "slow cooked" meals we can leave puttering on the wood stove, or other cool ideas. what do y'all got?

    Japanese Curry with Pork Katsu is one of my favorites. Frying pork in a yurt can be a bit wasteful though.

    If I’m feeling lazy, I’ll do Mac and cheese from scratch before the trip, throw it in a tin foil roast pan and reheat at the yurt. Add your choice of topping and homemade croutons.

    I’m a fan of making stews/food ahead of time then reheating once you’re there, more ski time and less packaging you have to bring with you.

    Fuck that. Anything that can be premade, vacuum sealed, and frozen. Boil water and least amount of dishes possible. Enchiladas is my go to. And of course tinned meats for apps.

    But I've only done trips for the poors, no heli/cook/snowmos.

    Cook a fatty pork roast all day and make carnitas. Easy enough to pre-cook the meat and then fry up a batch in its own fat when ready. Simple onion, jalapeno, cilantro, lime juice, garlic salt salsa. Some crumbly cheese and tortillas. You have all the elements of Salt, Fat, Acid, Heat and I've never seen it fail to please a crowd.

    Premarinated salmon filets either maple syrup
    Teriyaki or tequila mango and wild rice and grilled veggies was the Mrs.and I yearly meal
    Frozen and thawed our night at any hut with a propane grill
    I gotta say though catered is the way to go

    Agreed. Leaving stuff on the wood stove while you ski sounds great until you come back to dinner not being ready because the fire went out.

    If you have a big enough crew, split into groups of 2-3 people and each group takes a b/l/d cleanup and all. This makes it easier to get motivated to do bigger meals.

    Its not exactly fancy but something like the bear creek darn good chili w/ veggies and beef/turkey added to dress it up is easy to cook and hits the spot.

    I am pretty sure there is a thread devoted to this, but no idea what forum and who gives a fuck.

    Of course weight isn't an issue, who wants to be a weight weenie at a hut. I have had a thanksgiving dinner at a hut, pho, ice cream sandwiches, fresh baked bread, you name it.

    But I do think that stovetop meals are better than oven ones, because the ovens can be finicky and to get them to temp sometimes requires roasting all of the human hut inhabitants.

    Pro tip: if you're going to pre-chop onions, make sure to vacuum seal them. And in general, a vacuum sealer is a worthwhile investment.

    X2 on the vacuum sealer. You have so much more control of the recipe at home than you do in a hut or in a camp stove. Precook the goods, vacuum seal, freeze, and warm in their bags in hot water. No muss, no fuss.

    Vacuum sealer is the way to go...couple of things I’ve made and brought up: shrimp tacos, green chili and the huevos the next morning, brats, curry and beef stew.

    This. Catered and with a hired cook is the only way to go. I won't do a hut trip that isn't catered. Life is too short to spend that much of your vacation doing chores.

    I’ll tell you what not to do. Don’t eat a metric fuck ton of bean based chili after coming back from a huge day. We had this really good veggie chili, soaked the beans for a day, etc. probably ate at least a quart of it each. That night was “interesting”. At one point there were three people desperately holding their ass while waiting for the shitter. It seemed to hit everyone around 3am.

    I've done pre-cooked barbacoa in the slow cooker, bring all the taco fixin's (easy to do if you're doing breakfast burritos), shredded slowcooker barbacoa elk, then sauteed in the cast iron with some brown sugar

    Bonus: when the fire goes out in the middle of the night and the hut starts to get chilly, you'll have the meat-sweats to keep you warm!
