    Better late than never with my sous vide corned beef brisket today. I plan to top it with turbinado sugar, drizzle of bourbon then hit it with the broiler for a minute or so. No cabbage but got tatters and green beans plus Colemans mustard. Bone a fuckin teat man!

    Fun fact, and its hard to tell from my pic above, but apparently Jameson makes an orange flavored Jameson.

    I'd love to be in County Cork for the orange harvest one fine late summer day.

    I woke up and put on my Steal Your Face Leprechaun shirt, My green and white Leprechaun AF1s and logged in to work. Stepped out for lunch and got me and the college kid Shamrock Shakes. Got a ski ticket procured for Sunday. Life is good.

    Heh, exactly.
    I don’t want to badmouth any Jameson products (purely for selfish reasons). I want them all to do well and achieve widespread acceptance. But these are the line extensions I’d recommend hunting down first if at all possible…

    Happy St Patrick's day

    My corned beef brisket is failing. It looks like I got it from a mammoth out of a glacier. I think I may have to do some kind of “after sear” why I didn’t sear it first is beyond me. It’s ghost white pale. Simmering at 140f should I jack the heat maybe. Thanks in advance! Happy st Patrick’s!!

    Instantpot rocks for corned beef. Set for 70 minutes on high pressure, non-venting. Remove beef, leave juice, and rest beef loosely covered. Add carrots, potato wedges, and cabbage wedges to the pot for 3 minutes on same. Save the fucking butter for your morning eggs and toast, or for a Last Tango in Paris. Coarse ground black pepper to taste on your plate. Dijon mustard.
