    Rice and beans survival recipes thread

    This has found it's time. Everyone knows how nutritious this combo can be as a staple, and of course, cheap and long shelf life of supplies.
    I just made a pretty good black bean soup from a Jamie Oliver YouTube, which was onions, garlic, red and green peppers, jalepeño, some other things, and topped it off with poaching eggs on top at the end. I didn't do the eggs.

    So, anyway, he used beans in "tins". What say, fresh or canned beans? Which is more nutritious? And which rice? I like long grain.
    And, since this is a survival thread, a big question is, how do you make a decent black bean soup if onions and peppers and fresh herbs aren't available?

    Herbs from the garden, same same for the other stuff.

    Brown rice is supposed to be more nutritious but does take longer to cook if energy becomes an issue.

    Fresh ingredients are best but that opshun may not be available. Dry goods last longer when properly stored.

    There numerous lists online of goods to have but I also like legumes and pearled barley as LTS foods.

    No nutritional difference between canned and dried beans. No meaningful nutritional difference between different varieties of white rice. Brown is slightly more nutritious, black, purple and other more exotic dark varieties a bit more so. Use dried herbs and spices.

    Made a batch of chili this evening. I can eat off that for several days.

    El Polo Loco beans

    Wash and sort pinto beans, cover with water and soak overnight.
    Drain and rinse again.
    Put beans in large pot, cover with 2 fingers of water.
    Add quartered peeled onion, a few whole peeled garlic cloves, a couple cut serranos.
    Add cracked pepper.
    Bring to boil and then simmer for 2-3 hours, add water as necessary. Salt to taste after.

    Rice and beans we have. Wife stocked up. So I’m following. She also bought some kind of “soap” that has a million uses including brushing teeth.

    FYI: Rinsing canned beans, or rinsing dry beans after the soak will remove 93.2% of farts. My wife taught me this when we started dating and it’s been life changing...

    in Belize rice & beans and beans & rice are 2 completely different dishes. that always cracked me up. But I can’t remember which one I like better

    At 6000 feet dried beans are barely cookable without a pressure cooker which my wife says we don't have room for. And I don't expect to live long enough to cook a pot of brown rice.
    I had a fantastic pork feijoada in a restaurant in DC. I wrote for the recipe and they were kind enough to send it to me--they used canned beans.
