For those caring for infected family members, I feel for you. If you're the type who likes to be more educated about treatment, what's given at each stage and how well does it work, some TWiV episodes cover that. Specifically the Dr. Daniel Griffin episodes, recorded every Friday, usually released Saturday or Sunday. He speaks for 30 minutes near the start, you can skip the rest. His target audience is doctors, but he's aware us commoners are listening, and while technical, it's not too bad. Obviously one doctor's opinion, and you should trust yours over an internet doc.

Short TL;DR answer: science.
Slightly longer answer: Based on our clinical trial experience with prior vaccine trials (which are extensive), median time to adequately assess for adverse reactions is in the 40-50 day range (following immunization), with standard Gaussian distribution.
In order to adequately assess for safety, the FDA wanted a minimum of 8 weeks for data to "cure" in re: side effects, which is actually less than what they usually prefer, especially with immunological agents. This also needs to take into account data collection and analysis, which can lag behind the actual incidence of events. Weekends and the holiday season slows this at every link in the extensive data collection, communication and analysis chain, not just at the approval end, much like individual cars slowing down on the highway causes a traffic jam. I should add that possible side effects of vaccines can be significant, and have the potential to entirely derail an otherwise promising therapeutic candidate. Mofro prolly has a better handle on this.
Anyway, this is the explanation I'm getting from my Infectious Disease colleagues, and why Fauci initially felt Britain was jumping the gun on their approval. I'm pretty sure the FDA is actually accelerating their standard schedule for assessing and provisionally approving the SARS CoV2 vaccines based on available clinical trial data.
When dumbass MF know-it-all whiners complain about how “that's how the Fed'ral gubbmint operates" and continue to whine about that's why they "have so little faith in our bureaucrats” you realize what scientists and clinicians who are trying to responsibly inform health policy are up against.
My experience with clinical trials (which is not insignificant) says otherwise. This is something you can't or shouldn't do sloppily.
