2 months, give or take a week, after planting. Thinning is very important after the tops are about 5cm tall, as is making sure there is enough phosphorus in your soil.

I do it by size. I'm looking for a racquet ball sized beet. I also love beet greens, so sometimes I'll let some go longer. As said, thinning is key, and should give you a good indication of where you're at.

+1 judging their size by their tops poking out. Mid size is my sweet spot - snowball size +/-

When they're 'ready' depends on what I'm doing with them. Some people think when they get too big it's the same amount of beetyness dispersed in a larger, more fiber-y vessel. ymmv.

I like Chioggia beets due to presentation, followed by any beet with discernable variegation. They look cool.

I can't "hunt" or discharge firearms in city limits. So I need something quiet and not technically a firearm. And we are thick with rabbits, although they stopped living under the porch once we got a cat. I am surprised that the foxes in the wooded area across the street don't do a better job.

Oh, don't you worry, I have a Wrist Rocket and some quality ammo. I really want a righteous hunting quality compact air gun with a shortish barrel and a night scope. Good ones are expensive.

some city slickers who aren't allowed to shoot use a have-a-heart, then ice them .. remember, 1lb meat off each rabbit. Once they become the hunted, you'll enjoy savory meals and a noticeable lack of rabbits.
