    FALL is homemade soup time.

    I love homemade soup. The best time to prepare, and enjoy homemade soup is now. It's cheap (can be less than $10 for 6 servings) and nutritious. Tonight, I made my favorite: Escarole and beans (with chicken stock, cannelloni beans, cabbage and pork bones). Just add a little parmasean, and it is heaven.

    I'm not a huge soup fan, not sure why. But this is something we make occasionally, because it works for my keto diet and my kiddo loves it: https://www.staysnatched.com/keto-in...-cheddar-soup/

    It's modeled after Panera's broccoli cheese soup (which is tasty). This is a pretty good replica and super easy.

    There was a thread somewhere about soup/broth stock. But ya, a good broth this time of year warms more than just the belly. All year, any bone from a roast, or whole roast chicken, goes on the stove and simmers for a couple of days with a few herbs and veggies, gets strained then frozen until soup time. Half of one of freezers is just containers of broth or stock. So good, even the young princess finishes her serving without complaint.

    Thanksgiving smoked turkey carcass and the necks and stuff gets boiled and simmered for Turkey Soup.
    I use onion, carrots, celery, and egg noodles. I add salt and pepper to taste, and then add Butt Rub or Curry Powder. Usually a little(lot) of both. Then I add all the leftover turkey (not fit for samiches) and simmer it overnight. Sometimes I sub rice or pastini for the egg noodles.

    Really got hooked on Split Pea Soup a couple years back. I buy the bag of dehydrated peas at the grocery, follow their instructions, and then add a small ham bone with a bunch of meat on it. Leftover HoneyBaked Ham seems to be the best, but an uncooked one would probably add better flavor. I load it with ham. It is awesome if you've never tried it.

    Not entirely homemade, but home assembled..

    Had some good BBQ brisket, and was tired of making sandos out of it, so I chopped it it up and added it to a bag of corn poblano soup. Added a dried poblano of my own and some fresh garlic and onion. It was quite tasty!

    I love a good homemade chicken and dumpling or with homemade noodles. The vietnamese gf make a mean pho, it a process tho, minimum of 24hrs of simmering. That broth flavor tho!

    Can you please break this down pricewise? I just can't get there. Even with canned chicken stock, pork bones would be $4-6, let alone a tub of parm.

    Use leftovers. No need to buy stuff specifically for the soups. If I make something with bones, the bones become the soup base after the meal is done.

    anyone ever take a small hydroflask/thermos of hot tomato soup on a ski tour? simply magnificent, puts the life back into you. one key with tomato soup is just buying a lot of good canned tomatoes whenever they go on sale and throwing them in the cupboard, so that you don't feel like a fool spending $15 on a couple cans. also cooking down some carrots with the onion and garlic helps build sweetness and flavor.

    this is maybe more of a stew than a soup, but there isn't a stew thread. saute a bunch of onions, garlic, and carrots with salt in olive oil, and right as they're getting browned and give up their liquid, dump a bunch of moroccan seasoning on them and cook it in, stirring constantly until some of it starts to stick to the pan. add in coconut milk, sweet potatoes, and red lentils and cook down until tender, adding a little water as needed. add some spinach if you want greens. top with some greek yogurt, at least 2% fat, to serve.

    Soup is cheap. I can't breakdown the cost, but you sprinkle parmesan on the finished product. Pork bones, or ribs are cheap, as is a can of cannelloni beans. This time, I bought a rack of ribs for $14, cut it in thirds, placed 2/3 in the freezer and used 1/3. Roughly, I would say that this recipe's cost is as follows: meat $4, Cheese $1, veggies $3, Chicken stock $3, garlic $.25, EVOO, butter $.50 and Italian bread $1.

    My super simple soup I make at work to feed the crew:

    Cook 2 chicken breasts stove top and shred (20 minutes or so)

    In a stock pot or dutch oven combine the chicken and:
    6 cups of chicken broth
    2 cans great northern beans
    2 cans diced green chiles
    Small jar/can of salsa verde
    Salt/pepper/cumin to taste.
    Bring all the ingredients to a boil for a few minutes.
    Top with cilantro, sour cream, crushed tortilla chips and avocado slices.

    Quick and easy and a lot of servings.

    Just made kale, white bean and Italian sausage soup last night. Cheap, filling, super tasty, and reasonably healthy.

    I use this recipe as my basis, but I revise it a bit by sauteeing some tomato paste along with the onions, and adding extra fennel seed and cooking the fennel seed and rosemary along with the garlic. It's a keeper.
