Unfortunately the fundamentals are correct, water can't support a shear stress except maybe on a very small scale because of friction/surface tension, and therefore can't 'bend' at least in a structural sense. The problem is that that has absolutely NOTHING to do with the curvature of the earth! Just tell her to look up "non-Newtonian fluids" and explain that.
This is the problem with people like this, take some truth, in some instances at least, apply it in a totally incorrect way and then dig in.

I agree it's a bit difficult to trust 2nd or 3rd party accounts or evidence. If you knew someone who was involved in any of the missions that doubt is more easily cast aside. My father worked on a guidance system (Pershing Missile System) that was modeled for Saturn V and Buzz Aldrin was his USMA room mate. They remained pretty good friends until the day dad passed.
Also, we'll soon have collaborating or contradictory evidence from China and India's mapping and rover missions. If they see the shit we allegedly left there good luck with the faked narrative.Go that way really REALLY fast. If something gets in your way, TURN!
