    I only dry age my veal. And I use a dragon to sear it.

    Happy 4th. Now, stop grilling the burger.

    Have to agree with the no grill list myself. Camp chef pro with cast iron skillet over 2 burners is my preferred way to cook the red meat patties, veggies. And white fish, with a stainless bowl over to poach.
    The webber wood bbq kettle gets the real meat, wrapped roast/ham, and salmon on a plank sometimes. And fillet from a fresh kill on a stick over a campfire with a dash of salt and pepper.

    Edit: Unless you are grilling those sawdust burgers from costco. Dunno how they keep their shape, consistency and size on the grill, but they do.

    I will assume that you meant to say that you reverse sear it with your dragon.......right after the 37 hour sous vide.

    I would guess the reason is that some idiots aren't careful enough with the coals after cooking or during the process of getting them started... fire risk. This is why we can't have nice things..
