    Have a good one is funny for me, because I wasn't really aware of it as a 'thing' until I was maybe late teens or college, and then I decided to start using it. As with any expression you 'decide' to use it felt weird/artificial at first, but I began to really like it because you sort of left it up to the listener to decide what the 'one' was. It worked especially well for skiing, I thought, because I'd say it to people getting off a lift so it could mean 'have a good run' or 'have a good day' or if they were going in or something 'have a good lunch.' Never really bothered me, but I do remember thinking it was a weird expression (I think because it's inherently vague) when I first noticed its existence.

    It's possible I haven't said it at this point for a decade or more, though. Never thought it was regional, necessarily.

    Worked with a guy years ago and anytime someone said have a good one he always replied “I do”.

    Used to be a guy here at work who would say, "How" (as in the American Indian appropriated greeting from the movies) instead of hello. It was annoying until this old timer replied, "Me now how, me want to know when!". Yes, not PC, but pretty funny.

    My "have a good one" story:

    I first learned this expression in my second year of college, Ellensburg WA., c1979. I had a '63 Chevy step side pickup which I parked in front of my house a few blocks from campus.

    One morning as I was off to somewhere I went to the truck and found the stem of a red rose (with a rose attached) tucked under the drivers-side windshield wiper. On the outside of the windshield itself, right in front of the driver's seat was written, pretty neatly, in pink lipstick was, "have a good one".

    This, or some variation thereof, happened five or six times during the next four years I lived in that house. I never found out who it was, and don't know to this day. I still wonder and think of this every time I hear someone say it.

    My peeve, which is probably regional, is the expression "over yonder."
