In my entire life, I have never had a burrito with beans in it.
That's a long time, and a lot of burritos.
Although, I am putting beans in my taco.

I'm not a bean fan. Give me a brekie with green chile eggs and cheese, give me cheek meat with crema and guac. Don't needs those fillers.
But, I will redeem myself. Wait for it.

Smoked ribs pulled with quick pickled escarol, with white beans chili and onion marinated in lime, cumin, mex oregano.
Corn. Soft. Dinner.

eta; i'm not saying anything new; mexicanish cuisine as a whole done right, is healthy.

I rendered the ribs for 2 hours in 4 types of chilis. Basically carnitas with crunchy fatty bits.
Divine. The balance from the touch of balsamic and rice wine vinegar in the escarol coupled with the salt and green chile in the beans. To die for. Could have fed an army of Mexicans.Is it radix panax notoginseng? - splat

Indian Tacos? I wasn’t impressed, but maybe it was just the place I tried them at.
I came here to praise New Mexican Mexican food. I ran across a place in Clovis called Leal’s that has the best Mexican food I’ve ever tasted.
I since learned while looking them up that they are actually a small family owned chain of TexMex restaurants that started in Muleshoe Tx and drifted over the line into Clovis. If you ever find yourself passing through Clovis (or Muleshoe or Amarillo) at dinner time, it is worth a stop.
Try their Crispy Rellenos Grande: two crispy fried rellenos covered with Hatch green chile con queso served over a bed of tender savory brisket. Simply amazing food.
Sorry, what were we talking about again, tacos?

There’s a restaurant around here that does these pretty well. Kachina Cantina. They just opened another one in LODO I think.
