Anybody eaten Turkish ice cream?
Like at Republic of Booza in Brooklyn? I’m wondering if the salep flour and mastic changes the taste. Looks cool, though.

mastic has a bitter cedar/pine taste how much/how much it matters probably depends on the flavor. it also has slightly different "gum" propertys. 0 experience with it in ice cream.

It's nowhere near rosin/pinetar strong, and it's not a bad aroma, or at least the stuff I have doesn't have a bad aroma -more like a piney IPA, but like lots of those natural gums it seems there can be a decently wide variation depending on sourcing. Many of those gums - mastic, arabic, elemi - are traditional ingredients for paints/varnishes to soften the coating and make it more chip resistant.
