jamon, manchego, rioja. damn fine.
theres a 3* michelin, 6 2*, and 10 *ed in Madrid one of them should be good.

Norte Sur. Effing delicious and very affordable.
Higher priced, but I really enjoyed Terraza del Casino. Think it’s down to two Michelin stars now.

Wife is from Madrid. We eat there a lot. Here are a few of my favorite non-Michelin, non-trendy restaurants with outstanding food:
Asador Molinero
Avenida Europa 28

You will need to take a 10 minute cab ride from the center. Totally worth it for the "Cordero Lechal" (lamb). Make sure you order it when you make your reservation. The place is nothing to look at, hasn't been remodeled in over 20 years but all tables will be reserved. Go for lunch (around 2:30) and enjoy.
Restaurante La Española

This is the place to go for meat. Also a 10-15 minute taxi ride from the center. Start with some Croquetas de jamón ibérico, Setas de Vivero a la Plancha con Alí Oli, Pimientos Verdes Fritos and get the Entrecot de carne roja de Cebón a la Parrilla for the main course (comes with fries and chimichurri). Also, go for lunch so you can enjoy and digest this feast.

This is the place to go for seafood. In the center. My cousin in-law is from Malaga and he goes here for food from home.
