I don't care who you are, carving can be a shit load of fun. I wouldn't trade a pow day for it though.

Exactly. But, as we all know, pow days don't always happen. On non-pow mornings when the bulk of the crowd are either sleeping it off or just finishing off their all-you-can-eat breakfast buffet, or what have you, I love getting on the untracked corduroy and ripping top to bottom without any people on the runs. It's a blast but, as you noted, not the same as a pow day. Regardless, there are a whole bunch of skiers who don't really like skiing pow all that much for whom carving is just as much fun, if not more, than we have with powder.

Hunter Mtn. skier here. Watched the video. I don't get it. Why would you use carving skis on all that powder?

I like to pretend that carving is fun so that I don't cry about the early season conditions here in Tahoe every year.

Turn radius that short is dumb in 3d snow.
But for the spring snow they're skiing in that vid -- well it all felt pretty groovy and spot on to me.
Never thought to have a "spring" ski in my quiver. But I could imagine something that's stupid fun on corn, slush bumps and jibbing around that is a bit softer than most my other skis.
