    I'm not fond of dismembering my dinner but fortunately there's lots of places to get good lobster rolls around here.

    Many years ago a bunch of us air freighted in a couple dozen live lobstahs for a party. Ms TBS’ bought a couple for a coworker as well. I brought those home and slipped them into the bathroom while was taking a shower.

    Wife makes a gourmet lobster mac and cheese. For me it is the ultimate in decadent comfort food and as a lifelong consumer of the bugs (fun living in Mass where divers could take them) the best way to eat lobster

    Bugs are peasant food, but it's all the rage as long as you douse it in some sort of sauce.

    Well, they did cook 'em dead when it was peasant food, so they taste mo betterer now.

    I love the whole ceremony of playing with, preparing and eating that messy meal. The Maine lobster is All American. I used a New England Lobster Feast for 12 delivered to your door as the grand prize for a Nalgene sales rep contest I designed. Some guy in the mid west won.

    If you're not dissecting it from the shell yourself you have zero confidence that it's actually lobster or crawfish and not shrimp or scallops. In fact, I'd rather have those things in meals where the meat's shredded up already. I only like lobster in BIG chunks on the side with other stuff..

    Around here it's recognizable pieces of lobster, not some mush. It's not "lobster salad" it's pieces of lobster in a buttered grilled hot dog roll with maybe some lettuce under it. Served with mayo on the side if you're not a heathen, melted butter if you are. No confidence issues at all.

    This pic from the Bayside Restaurant, it's about a mile from here, they're known for putting a lot on a roll but it's pretty typical:



    The buns are critical. Flat-sided hot dog rolls, grilled in butter. Not sure if they have these buns outside New England:

    If those chunks were any smaller it could easily be crab meat instead of lobster.

    Next question.. What about farm raised lobsters? I wonder what % of all restaurant served lobster and lobster roll meat is no longer fresh caught??

    In a tablecloth joint, maybe...Most places in Maine a lobster roll=whole tail in a standard white hot dog bun with mayo $16

    here's a lobster roll from probably the most famous lobster roll joint in Maine, Reds Eats. Not a table cloth joint at all. It's how we do.





    And I dunno about Texas toast. they're hot dog rolls. Nissen probably the best known.





    My areas of expertise are not vast but lobster rolls are in my wheelhouse.

    If we're talking clawed true lobsters from the Nephropidae family, none. They go through multiple larval stages, grow quite slowly, and are cannibalistic in captivity which makes farming them impractical. Farming of warm-water Palinuridae spiny lobsters is on the rise in Asia.
