I'd go with the G3 boundary 100s! Probably the best ski for ski mountaineering and I happen to know where you can get a great deal on them, completely set up and ready to ski mountaineer all over the mountains!

Real ski mountaineeering skis are 88mm waist or narrower, relatively short and light, but that's usually off the point because most people who claim to ski mountaineer are actually engaged in ski touring but call it "ski mountaineering" to appear gnar.

I'd argue ski mountaineering is where there's just as much emphasis on the up (usually trying to summit something), as there is on the down. Seeing that the sport of mountaineering is related to climbing mountains...
Ski touring, you are simply just trying to get somewhere, to ski down.
Just because something getting up something is easy or hard, doesn't make it any 'less' mountaineering. Just like climbing a 5.7 and a 5.12a is still rocking climbing.
... which is why ski mountaineering skis are traditionally skinny and short. They are tools to move around the mountains, not the point of the trip.

IMV it's a fatally broad definition. A single technical move does not metamorphose a ski tour into a ski mountaineering route by any definition in general usage. As the term is usually used, ski mountaineering is a blend of skiing and mountaineering, and that begs the definition of "mountaineering." Sometimes non-technical routes qualify as mountaineering, e.g., a long class 3 summit route above deadly exposure is not technical (per generally used definition), but it's mountaineering by any definition.

No, that's just incorrect. You are conflating terms. Class 3 climbing requires frequent use of hands and is thus not merely hiking, of course. A sustained class 3 summit scramble over deadly exposure is mountaineering, although Class 3 climbing not "technical" under most definitions because it does not require special gear (for most climbers).* There are long class 2 routes that certainly qualify as mountaineering as most people define the term.
*Note that the classic definition of Class 3 includes the qualification that experienced or athletic climbers will not want a rope but a rope should be available. This definition has been watered down in recent decades.
