    Actually, I grew up in many 4 and 5 star restaurants.

    I didn't say sous vide wasn't consistant, and that it didn't work on a mass scale, which is what those restaurants need to serve masses of customers.

    However, sous vide often lacks concentration of flavours and proper cooking of the fat, which is easy to discern. If you know, you know.

    If you don't know, then like I said, you're probably the type who can't tell the difference in quality between a kurig and a lever pulled espresso shot. Or between a soda stream and real small-batch Italian soda.

    And the Maillard reaction is just as valid with sous vide.
