Righto. Bombay (to myself) has a weird aftertaste, almost cloyingly sweet. Plus the bottle makes it look like Costco sized Axe Bodyspray.

You poor soul, you take that firewater and a good limoncello recipe and cut it down to about 60 proof for a digestief. So much better than vodka based recipes that arrive at 30 proof or less.
Perhaps you should reconsider your kitchen staff. Clearly they need more training.

Hmm.... It's been years since I've inspected the kitchens, perhaps a trip down to the cellars is in order. My last visit, and the ensuing publicity related to the floggings, did me no favors, so I am hesitant. But if, as you assert, Everclear is no longer just for Jugallos, I am willing to revisit my prejudices.

Bombay Sapphire, Sweppes, three rocks, 1/8 of a lime wedged but not squeezed.
I find preparation order to be key.
3 rocks first, pour sapphire to top of rocks level, finish with tonic. Submerge lime. Stir once.Live Free or Die

The correct Gin and Tonic: List 'em up Maynard.
I fill a pint glass with ice, mash (finger muddle?) the shit out of a 1/8 a lime (cut in half thru the middle not end to end, then quartered) then a full jigger (I think 2 oz) of either Sapphire, Tanq or Beefeaters... but let's be honest even well is good for a g&t. Fill with Schweppes. My wife likes diet I like regular but switch back and forth because I seem to drink more and tend to run out.
I also like to switch up the gin for the subtle differences. Keeps it from getting boring I guess.

While not technically in season yet (isn't it kinda like wearing white-> Memorial Day to Labor Day?) we had our first yesterday because my wife got a new gin that was onsale. Bulldog. Not bad.

To me the only important thing is freshly-opened tonic whatever the type- needs to be very bubbly. Do not save tonic for the next day. Many bar fountains don't cut it in this department imho.
I like some bitters too. By the time you add that and sweet tonic water, good gin is a waste to me. But then I feel that way about all mixed drinks- save the good stuff for when drinking neat, up etc.
